Unlike broth, which typically uses long-simmered bones, meat stock is made with fresh cuts that include joints, skin, fascia, and connective tissue. Ingredients
2 Whole Chickens (small sizes)
500g Chicken Wings/Necks/1-2 Feet
4 tbs Quality Salt
Filtered Water
Preparation

Put chicken and salt in a large pot (I use an 18L pot however I would never fill completely)
Cover the chicken with water
Bring to the boil, then simmer covered for 2 hours.
Strain into glass jars and refrigerate.
Keep the chicken meat to add to soups later!
