Chicken Stock

Chicken stock is a cornerstone of gut-healing nutrition, especially in the early stages of the GAPS diet. Unlike broth, which typically uses long-simmered bones, meat stock is made with fresh cuts that include joints, skin, fascia, and connective tissue. This shorter-cooked, nutrient-dense liquid delivers a powerful blend of bioavailable minerals, amino acids, collagen, elastin, and essential vitamins. As Dr. Natasha Campbell-McBride recommends, meat stock offers deeper healing benefits during the first year of GAPS, gently nourishing the gut lining while supporting overall recovery.

Ingredients

2 Whole Chickens (small sizes)

500g Chicken Wings/Necks/1-2 Feet

4 tbs Quality Salt

Filtered Water

Preparation

  1. Put chicken and salt in a large pot (I use an 18L pot however I would never fill completely)

  2. Cover the chicken with water

  3. Bring to the boil, then simmer covered for 2 hours.

  4. Strain into glass jars and refrigerate.


Keep the chicken meat to add to soups later!
